Robusta Se
This lot features Robusta Se, an old/original variety brought to Vietnam, known for its small bean size and wild genetic diversity. Grown in the Central Highlands at elevations of 1000–1200 meters, it thrives in a cooler climate that helps develop sweetness and structure. Similar to Ethiopia’s heirloom arabicas, these robustas have naturally evolved over decades through open pollination, carrying deep-rooted character and complexity.

A Rare and Special Lot
While many farms now grow higher-yielding hybrids like Xanh Lùn or TR4, Robusta Se remains harder to find. When we sourced a small lot of this traditional variety from the highlands, we decided to treat it with the same care and innovation we give our finest arabicas.

Oxy-NOxy – Double Fermentation Natural
We crafted a two-stage fermentation we call Oxy-NOxy Natural: first 5 days in oxygen-rich (aerobic) conditions, followed by 16 days sealed in anaerobic tanks. This 21-day process allows both brightness and depth to shine in the final cup.
