The process explained
Carefully selected, cleaned, and floated cherries are placed into airtight containers such as tanks or bags, to limit oxygen exposure. These containers are then sealed, and the fermentation process begins as natural enzymes and microorganisms break down the sugars and mucilage within the cherries. With our coffee, this fermentation stage typically lasts between 80-100, depending on the desired flavor profile.
